colesterolEl centro tecnológico Ainia ha identidicado bacterias que pueden asimilar el colesterol. El trabajo se enmarca en un proyecto que incorpora bacterias probióticas en productos cárnicos con altos contenidos en grasa, como nueva alternativa para el desarrollo de productos cárnicos más saludables.

El objetivo es la incorporación seleccionada de bacterias activas en el alimento que contribuyan a la disminución del riesgo de padecer enfermedades relacionadas con hábitos alimenticios (cardiovasculares y obesidad).

Las experiencias que está llevando a cabo en este centro tecnológico valenciano han permitido seleccionar ciertas bacterias capaces de reducir el colesterol. En concreto, se han identificado diferentes cepas de bacterias lácticas del género Lactobacillus que son capaces de desarrollar esta función.

Según José Enrique Carreres, jefe del departamento de nuevos productos de ainia, «en estudios microbiológicos de laboratorio se ha evidenciado que estas bacterias lácticas tienen capacidad de asimilar el colesterol. Además, degradan las sales biliares presentes en el ensayo».

Una vez identificadas estas características en las cepas en estudio se está trabajando en su incorporación a productos cárnicos tradicionales. «Estamos realizando estudios con estas bacterias, utilizando los parámetros físico-químicos del proceso de elaboración de estos productos, ya que hay que tener en cuenta que en el proceso de elaboración de un producto tradicional cárnico se utilizan rangos de temperaturas, pH… que pueden afectar al microorganismo, y nuestra misión es conseguir que estas bacterias permanezcan activas en el alimento elaborado».

De esta forma, se obtendrá un producto cárnico tradicional, que contribuirá a mejorar el perfil lipídico en sangre del consumidor, y todo ello además cuidando las características sensoriales (color, sabor, textura..), físico – químicas y nutricionales de los productos cárnicos tradicionales.

Investigación puntera

En la actualidad, la mayoría de estudios de mejora saludable en productos cárnicos se basa en la reducción del contenido en grasa, la modificación de los ácidos grasos o bien la sustitución parcial de la grasa por ingredientes y/o aditivos tales como fibra, proteínas vegetales u otros. Sin embargo, todas estas opciones suponen modificar la formulación de los productos cárnicos, lo que muchas veces implica cambios en las características sensoriales del alimento y consecuentemente rechazo en el consumidor.

Si bien en otros sectores como el lácteo la investigación y uso de probióticos está bastante desarrollado y abundan los productos mejorados con ellos, de consumo habitual, en el sector cárnico es todavía una línea de trabajo incipiente.

Este proyecto es el resultado de una línea estratégica de investigación de ainia que está siendo apoyada por diversas instituciones públicas. El objetivo final es generar conocimientos en cuanto al empleo de bacterias probióticas en productos cárnicos, modificaciones que tienen lugar en las características de dichos productos, formulaciones y producción, que sirvan para que posteriormente se puedan implantar a nivel industrial y ayudar así a las empresas a satisfacer las necesidades del consumidor, cada día más demandante de productos alimentarios más saludables.

Demanda social

Numerosas organizaciones de todo el mundo (OMS, USDA…) están promoviendo la importancia de llevar una dieta baja en grasas saturadas y colesterol y moderadas grasas totales, como método de prevención de enfermedades cardiovasculares, que constituyen una de las principales causas de mortalidad en el mundo.

En este sentido, gran parte de los productos cárnicos tradicionales tienen un elevado contenido en grasa (20-40 %) y en colesterol (70-90 mg/100 g). La industria cárnica está realizando grandes esfuerzos en los últimos años por mejorar las características nutricionales de sus productos y dar respuesta a las demandas y hábitos de consumo de las sociedades avanzadas actuales, desarrollando productos cada día más saludables.

Según datos del Panel de Consumo 2007 del Ministerio de Medio Ambiente y Medio Rural y Marino, el consumo per cápita en España de productos cárnicos fue de 50,6 kg/año, representando el cuarto producto en importancia por detrás de frutas frescas, la leche líquida y hortalizas frescas. En cuanto a volumen de consumo, la Comunidad Valenciana representa aproximadamente el 10 por ciento del consumo nacional de productos cárnicos (49.695,08 miles de kg en la C.V. frente a los 489.229,84 miles de kg a nivel nacional).
